Bok Choi Salad
Bok choi and carrot marinated.
|4||baby bok choi (or 1 large bok choi)|
|1||carrot (shaved into strips w/ veg peeler)|
|3||Tablespoon||Ginger ((about 2" piece))|
Chop leaves of bok choi into 1/2" strips and slice stems thinly.
Blend all but first two ingredients.
Mix half the marinade w/ the bok choi and carrot. Add more as needed.
