Delish Egg Salad balanced with savory, sweet, creamy and crunchy. The secret ingredient "butter" preserves the texture and prevents weeping.
|1⁄8||Cup||butter (Very soft)|
|1⁄4||Cup||Sweet Relish (Drained)|
Remove yolk from hardboiled eggs. Combine yolk, softened butter and mayo until well-combined and very creamy. Add sweet relish (drained), shallot, garlic powder, celery salt and dillweed to yolk mixture. Adjust seasoning as needed and add lemon juice to taste. Chop egg whites into medium sized pieces and add to the yolk mixture, gently combine.
I like to serve this egg salad on toasted sourdough bread with arugala.
