Parmesan Roasted Potatoes
These potatoes are perfect for a buffet or a picnic as they taste amazing even at room temperature. Pesto sauce served with them complements it well as a dipping sauce.

- Heat oven to 400° F.
- In a large roasting pan, toss the potatoes, thyme, Parmesan, oil, 1 teaspoon salt, and ¼ teaspoon pepper.
- Roast for about 45 minutes stirring once, until golden brown and crisp.
These potatoes can also be served in tortillas with pesto sauce and yogurt.
